Showcasing the Versatility of Greek Yogurt

My first cookbook, The Greek Yogurt Kitchen showcases the versatility of Greek yogurt is in a variety of recipes. You may dig into a cup of Greek yogurt for breakfast or grab a cup of at work, but there are so many other ways to enjoy Greek yogurt. Plus, foods or meals with protein (like from Greek yogurt) have been linked to improvements in satiety and may help people feel fuller longer. Last week, I was thrilled to do a cooking demonstration and book signing at my local Barnes & Nobles in Scarsdale where I demonstrated three summer appetizers using Greek yogurt.

Every summer barbecue needs a dip, and my Parsley Hummus is the perfect tasty addition. In this recipe I combine traditional hummus ingredients including chickpeas, garlic, tahini, salt, black pepper, and extra-virgin olive oil and jazz it up with parsley. I also add ¼ cup of plain Greek nonfat yogurt to complement the nutrients that are already there. Greek yogurt adds protein, calcium, and often times potassium, plus it makes the dish even creamier.

The next recipe I demonstrated was my Farro and Pea Shooters with Lime Dressing. I cooked the farro in my rice cooker, which saved me 30 minutes of standing over the stove. Then I combined the farro with cooked green peas, radishes, jalapeno pepper, and top it with a dressing made with sriracha, lime juice, 2 tablespoons of Dannon® Oikos® Plain Greek Nonfat Yogurt – Plain, salt, and black pepper. The Greek yogurt help adds consistency and thickness to the dressing. The farro salad is then placed into shot glasses (or small single-serve cups) and topped with the dressing and garnished with cilantro.

The last recipe I demonstrated was my Salmon and Cucumber Bites, which is also found in my cookbook. This is one of the easiest Greek yogurt recipes that my kids devour. I slice an English cucumber into evenly cut coins, and then combine Greek yogurt, whipped cream cheese, and dill in a small bowl. The Greek yogurt picks up the flavor of cream cheese and dill. I spoon it over the cucumber coins and top it with thinly sliced smoked salmon.

My youngest daughter, Micah, helped me with the Farro and Pea Shooters. She carefully placed them in tasting cups for the audience. Everyone was also given the opportunity to take home a few containers of Oikos Greek yogurt, so they can try using it in recipes at home.
